Outputs As Variables

Hi - Just wanted to see what is the best way to perform either of the following:

-Reference a previous step's output in a flow (which is a webhook)
OR
-Create a variables from a previous step's output in a flow (which is a webhook) and use that later in the flow

Example:

Run API Name "XYZ"
Set Variable (API Output of XYZ)
